3 cups low sodium vegetable broth , divided
3 large russet potatoes , cut into 1/2 inch cubes
3 cans chickpeas , rinsed and drained
3 cans diced tomatoes , drained
1 medium onion , diced
9 garlic cloves , chopped
3 tablespoons curry powder
3 cups baby spinach leaves , roughly chopped ( tightly packed )
Potato & Chickpea Curry With Rice (Dutch Oven) is an easy and flavorful vegetarian meal that can be made in one pot. This dish is perfect for a busy weeknight or for a cozy weekend meal. Instructions

1.Preheat oven to 350°F (175°C).
2.Rinse rice until the water runs clear.
3.In a Dutch oven, combine the rice and 2 1/4 cups of vegetable broth. Stir and bring to a boil over high heat.
4.Cover the Dutch oven and transfer it to the preheated oven. Bake for 30 minutes.
5.In the meantime, combine the potatoes, chickpeas, diced tomatoes, onion, garlic, and curry powder in a bowl.
6.After 30 minutes, remove the Dutch oven from the oven, add the remaining 3/4 cup of vegetable broth, and the potato mixture on top of the rice.
7.Cover the Dutch oven and return it to the oven. Bake for another 45-50 minutes, until the potatoes are soft.
8.Remove the Dutch oven from the oven, add the baby spinach, and stir everything until the spinach is wilted. Serve hot.
