3 medium onions , peeled , cut into 1-inch pieces , divided
14 green onions , coarsely chopped , divided
40 ounces russet potatoes , peeled , cut into 1-inch cubes , divided

1 large zucchini , trimmed , cut into 1-inch pieces , divided
1/2 cup unsalted matzo meal
2 1/2 teaspoons salt

8 tablespoons vegetable oil

Instructions

1.Preheat the oven to 375°F (190°C).
2.Lightly oil a 13x9-inch baking dish.
3.In a food processor, pulse the eggs, half of the onions, half of the green onions, half of the potatoes, half of the carrots, half of the zucchini, matzo meal, salt and black pepper until chunky and slightly smooth.
4.Add the remaining onions, green onions, potatoes, carrots, and zucchini; pulse again until chunky and smooth.
5.Slowly pour vegetable oil into processor while pulsing mixture until well combined.
6.Pour the mixture into the prepared dish.
7.Bake until golden brown, 65-70 minutes.
8.Let cool for 10 minutes before serving.
