Ingredients

550 g potatoes
1 onion
2 tablespoons olive oil
4 eggs
1 red chilies , deseeded and finely chopped or 1 dried chili
2 tablespoons roughly chopped fresh coriander ( optional )
crusty bread , to serve
Potato cakes have been a staple in many countries for generations, and this recipe adds a spicy twist to this classic dish by serving it with chili scrambled eggs. Instructions

1.Preheat the oven to 200C. Coarsely grate the potatoes and onion and squeeze out any excess water.
2.Heat 1 tablespoon of oil in a 24 cm ovenproof frying pan over medium heat. Add the grated potato and onion, mix well and pat down the mixture with the back of a spoon.
3.Cook for 10 -15 minutes until golden brown and crisp underneath. Carefully turn the cake over in the pan using a large plate, then slide it back into the pan and cook the other side for 5 - 10 minutes, until golden brown.
4.Beat the eggs with a fork in a bowl, stir in the chili and some seasoning.
5.Heat the remaining oil in a non-stick frying pan over low heat. Add the egg mixture and cook for 3-4 minutes until scrambled and soft.
6.Scatter the coriander over the potato cake and cut into wedges. Serve with the chili eggs and crusty bread.
