Ingredients

1 1/2 cups warm water
2 ( .25 ounce ) packages active dry yeast
2 tablespoons sugar
2 tablespoons melted , cooled butter or oil
1 tablespoon salt
4 1/2 cups all-purpose flour , or more as needed

Instructions

1.In a large bowl, dissolve yeast in warm water.
2.Mix in the sugar, melted butter or oil, salt and potato flakes. Add in flour, one cup at a time, to make a soft and workable dough.
3.Knead the dough on a floured surface until smooth and elastic, for at least 10 minutes. Note, add more flour if the dough is too sticky.
4.Grease a bowl with butter or oil, place the dough in the bowl and cover with a towel. Let it rise in a warm place for 1 hour, until it doubles in size.
5.Preheat oven to 375°F, adjust rack to center position.
6.Punch down dough, let rest for 5 minutes. Shape the dough and transfer into a greased loaf pan.
7.Let the dough rise again for 30 minutes.
8.Bake in preheated oven for 45 minutes, or until crust is golden and a hollow sound is made when tapped.
9.Remove bread from pan and cool on a wire rack.
