2 big potatoes
2 cups minced chicken
1 big lemon
1/4 cup butter
1 big tomatoes
1/4 tablespoon tomato sauce
1 cup parmesan cheese

Instructions

1.Preheat oven to 200°C (400°F).
2.Precook the potatoes in the microwave for 5-7 minutes or until they are just slightly cooked.
3.Cut the potatoes lengthwise in half and scoop out the flesh.
4.Preheat a non-stick pan over medium heat. Add olive oil, onion, tomato and tomato sauce. Stir fry for 2-3 minutes. Add minced chicken, salt, and black pepper. Stir fry until until chicken is cooked, for about 10 minutes.
5.Add juice of 1 lemon, 1/4 cup of butter and 1/2 cup of Parmesan cheese in the non-stick pan and mix well.
6.Stuff the chicken and cheese mixture in the potato halves. Sprinkle remaining Parmesan cheese on top of each stuffed potato half.
7.Place the stuffed potato halves on baking sheet or tray lined with parchment paper.
8.Bake for 30-40 minutes in the oven until the cheese is melted and golden brown on top.
