Ingredients

1 teaspoon oil
3 slices bacon , chopped
1 onion , finely minced
2 cups mashed potatoes
1/2 tablespoon sour cream ( your mashed potatoes may already be adequately creamy ) ( optional )
410 g edgell sauerkraut , well drained
1 egg , lightly beaten
1 teaspoon brown sugar , to taste
1 teaspoon caraway seed
fresh ground pepper , to taste
salt , to taste ( depends on how much salt has already been added to the potato and sauerkraut )
2 tablespoons oil , for cooking
Potato, Bacon and Sauerkraut Patties are a classic comfort food dish that is savory and satisfying. Instructions

1.Heat oil in a large skillet over medium-high heat. Add bacon and cook until crispy.
2.Add onion and cook for 2 minutes or until soft.
3.In a large bowl, combine mashed potatoes, sour cream (if using), sauerkraut, egg, brown sugar, caraway seed, pepper and salt to taste.
4.Add bacon and onion mixture to the bowl and mix everything together well.
5.Form the mixture into patties and place onto a plate.
6.Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat. Add patties and cook for about 3-4 minutes on each side or until crispy and golden brown.
