1/4 teaspoon pepper

Instructions

1.Boil quartered red potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
2.In the same pot of salted water, quickly blanch green beans until bright green, about 2-3 minutes. Drain and rinse with cold water to stop cooking process.
3.In a large bowl, mix together the cooked potatoes, blanched green beans, marinated artichoke hearts (drained and chopped), chopped kalamata olives, white wine vinegar, chopped fresh parsley, salt, and pepper.
4.Chill salad until ready to serve.
