1 chicken leg quarter ( cut in half , boil in 3 cups of water for 10 minutes )
1 tablespoon olive oil
1/2 cup diced onion
2 teaspoons minced garlic cloves
1/2 cup raw small shrimp
1 carrot , diced
2 green onions , chopped
1 1/4 teaspoons salt ( to taste )
1/2 teaspoon pepper ( to taste )
1 package egg roll wrap
1 egg , lightly beaten
3 cups vegetable oil

Instructions

1.Boil chicken leg quarter for 10 minutes in 3 cups of water.
2.In a pan, add olive oil, onions, and garlic. Cook for 2 minutes, then add shrimp and cook for an additional 2 minutes.
3.Add the diced carrot, green onions, and 20oz Simply Potatoes Diced Potatoes with Onion. Cook for 5-7 minutes.
4.Add salt and pepper to taste. Let mixture cool down.
5.Preheat vegetable oil in a small pot to 375°F.
6.While oil is heating, arrange the egg roll wrap and add 1 tablespoon of the shrimp filling. Brush lightly beaten egg around the wrap edge and fold the wrap tightly. Repeat until all filling is used up.
7.Fry the egg rolls in batches until golden brown, for 3-4 minutes per batch.
8.Remove the egg rolls from oil and place on paper towels to drain the excess oil.
