Ingredients

2 potatoes , peeled and very thinly sliced ( paper thin )
100 g crab
1 japanese cucumbers ( paper thin ) or 1 English cucumber , very thinly sliced ( paper thin )
salt , for salting cucumber
1/2 cup rice vinegar
1/4 cup sugar
1/4 teaspoon salt ( or to taste )
1 teaspoon soy sauce

Instructions

1.Salt the cucumber slices and let them sit for 5-10 minutes to release water. Squeeze out the excess water afterward.
2.Bring the rice vinegar, sugar and salt to a simmer in a small saucepan over low heat.
3.Remove from heat and cool for 5 minutes then whisk in soy sauce.
4.Arrange sliced potatoes, crabmeat and cucumber in a large bowl.
5.Pour over the cooled vinegar mixture.
6.Toss gently until the potato and cucumber slices are coated evenly with the dressing.
