Instructions

1.Preheat the oven to 375°F.
2.Peel the potato and slice it thinly. Place the potato slices in a bowl.

4.Pour the egg mixture over the potato slices and stir to coat well.
5.Add grated parmesan cheese to the mixture and stir to combine.
6.Break matzo into small pieces and soak them in a bowl of warm salted water for a few seconds.
7.Beat two eggs with milk in a small bowl.
8.Add three tablespoons of olive oil to a nine-inch pie dish.
9.Place a layer of matzo pieces on the bottom of the dish.
10.Pour half of the potato mixture on top of the matzo, and use a spoon to spread it evenly.
11.Add another layer of matzo pieces on top of the potato mixture.
12.Pour the remaining potato mixture over the second layer of matzo, and spread it evenly.
13.Add a final layer of matzo on top of the potato mixture.
14.Pour the egg and milk mixture over the matzo.
15.Place the pie dish in the oven and bake for 35-40 minutes or until the top is golden brown.
16.Let the pie cool for a few minutes before serving.
