Ingredients

1 cup rice flour
2 large potatoes , boiled , peeled and mashed
1 cup carrot , grated
1/2 cup sour yoghurt
3 green chilies
1 inch fresh ginger , finely sliced
3/4 cup fresh coriander leaves , finely chopped
1/4 cup fresh mint leaves , finely chopped
salt
oil , as required
Potato and carrot dosa is a variation of the traditional South Indian dosa. Instructions

1.In a large bowl, mix rice flour, mashed potatoes and grated carrots.
2.Add sour yoghurt and mix well.
3.Add sliced green chilies, finely chopped fresh ginger, fresh coriander leaves, fresh mint leaves and salt. Mix well until a smooth batter is formed.
4.Allow the batter to rest for 10 minutes.
5.On a hot griddle or pan, pour a ladleful of batter and spread it in circular motion.
6.Drizzle oil around the edges and on top of the dosa.
7.Cook on low-medium heat until the bottom is brown and golden.
8.Flip and cook the other side until brown spots appear.
9.Serve hot with chutney and sambar.
