6 garlic cloves , minced
2 celery ribs , sliced

1 1/3 cups lentils ( Lentilles de Puy , small green French lentils )
2 cans diced tomatoes
5 cups vegetable stock
3 sprigs thyme
2 bay leaves
sea salt and pepper

Instructions

1.Heat olive oil in a large pot over medium heat.

4.Reduce heat to low and simmer for about 45 minutes, or until lentils are soft.
5.Remove bay leaves and thyme sprigs, puree soup using a blender or immersion blender.
