Ingredients

3 cups all-purpose flour
1/2 teaspoon salt
1 cup warm water
4 dried black dried Chinese mushrooms
8 ounces ground pork
1/4 cup scallion , minced
1 teaspoon gingerroot , minced
2 tablespoons chicken stock
1 egg , beaten
3 teaspoons soy sauce
2 teaspoons sesame oil
1/8 teaspoon white pepper , ground
2 teaspoons oyster sauce
1 tablespoon dry sherry ( Shao Hsing wine )
2 cups napa cabbage , finely chopped
1 teaspoon salt
3 tablespoons canola oil
1/2 cup hot water

Instructions

1.In a large bowl, combine flour and salt, then gradually add in warm water and stir until a dough is formed. Knead the dough for 5 minutes, then let it rest for 30 minutes covered with plastic wrap.
2.In a small bowl, soak the black mushrooms in hot water for 30 minutes, then squeeze off any excess water and finely dice.
3.In a large mixing bowl, combine the diced mushrooms, ground pork, scallions, ginger, chicken stock, beaten egg, soy sauce, sesame oil, white pepper, oyster sauce, and sherry.
4.Add the napa cabbage and salt to the mixture and mix to combine.
5.On a floured surface, roll out the dough into a thin sheet, then cut out circles of about 3 inches in diameter.
6.Fill each circle with a small amount of the pork mixture, then fold the dough over and crimp the edges together to form a crescent shape.
7.Heat a large pan over medium-high heat and add canola oil. Add the pot stickers to the pan and fry for 2-3 minutes until the bottoms are browned.
8.Pour in the hot water, cover the pan, and reduce the heat to medium-low. Let the pot stickers steam for 5-6 minutes until fully cooked and soft. Serve with soy sauce and hot chili oil.
