Pot Sticker Egg Rolls are an innovative version of the classic pot sticker, originated in Northern China. Instead of using the common wheat wrapper, this recipe features the crispy golden-brown baked egg roll wrapper filled with shrimp, crab meat, ginger, and assorted vegetables. This recipe has the same great flavors of authentic pot stickers, but with an added crunch. Perfect for an appetizer or a meal, easy to make and versatile to customize to one's preference. A must-try for those who want to explore some new and exciting Chinese delicacies.

Instructions

1.1.Preheat oven to 375 degrees F (190 degrees C).
2.Mix ginger, bean sprouts, green onions, water chestnuts, mushrooms, shrimp, crab meat, and vegetable oil together in a large bowl.
3.Fill a separate small bowl with water.
4.Lay 1 egg roll wrapper on a flat surface with a corner pointing towards you. Spoon a heaping tablespoon of the filling into the center of the wrapper, and fold the bottom corner over the filling. Fold the left and right corners over the filling, then roll the egg roll up to the top corner. Wet the top corner with a little water to seal the egg roll closed. Repeat with remaining egg roll wrappers and filling.
5.Spray a baking sheet with cooking spray. Arrange the egg rolls, seam sides down, on the baking sheet.
6.Bake in the preheated oven until golden brown, about 15 minutes.
