Ingredients

1 kg silverside beef or 1 kg topside beef , with no added fat
2 tablespoons olive oil
8 young carrots , tops trimmed
1 celery rib , finely chopped
200 ml white wine
600 ml beef stock
2 bay leaves
500 g onions
3 fresh thyme sprigs
1 teaspoon butter
1 teaspoon light brown sugar or 1 teaspoon light muscovado sugar
2 teaspoons plain flour
Pot-Roast Beef With French Onion Gravy is a classic traditional meal that has been enjoyed by families for generations. The slow cooking process allows the beef to become incredibly tender and flavoursome, and the French onion gravy is packed with delicious flavours. Instructions

1.Preheat the oven to 180°C/gas 4.
2.Heat the oil in a large flameproof casserole dish or heavy frying pan. When hot, brown the beef all over for 10-15 minutes until nicely coloured. Remove the beef from the pan and set aside.
3.Add the vegetables to the same pan and cook gently for 10 minutes until they are starting to soften and brown slightly. Add the white wine and cook for a further 5 minutes until reduced by half.
4.Pour in the beef stock and add the bay leaves. Bring to the boil then remove from the heat.
5.Cut the onions in half then into thin slices. Melt the butter in a separate pan and add the onions. Cook slowly, stirring occasionally until softened and browned, around 10 minutes. Sprinkle in the sugar and flour and stir to cook, around 2-3 minutes.
6.Return the beef to the pan with any juices that have collected. Scatter the thyme leaves on top of the beef and arrange the onions around it.
7.Pour the vegetable and beef stock mixture over the top. Cover with a tight-fitting lid and cook in the oven for around 3-3 1/2 hours until the beef is tender and falling apart.
8.Remove from the oven and leave to cool for a few minutes before serving. Spoon the vegetables and gravy over the beef and enjoy!
