Ingredients

1 cup textured vegetable protein , chunks
3 cups water , boiling
2 onions , chopped
4 fresh garlic cloves , minced
1 tablespoon canola oil or 1 tablespoon olive oil
1 can diced green chilies
2 cans white hominy or ( 15 ounce ) cans yellow hominy
4 diced tomatoes ( fresh or canned )
vegetarian chicken broth ( I use Frontier brand powdered broth )
1 tablespoon chili powder ( I use Frontier brand Fiesta Blend )
3 -5 stalks fresh cilantro , chopped
6 cups water ( additional )
lime juice
Posole is a traditional Mexican soup made with hominy and meat, but this vegetarian take on the dish packs a hearty and healthy punch. Textured vegetable protein stands in for the traditional meat, while green chilies add a kick of flavor. Fresh cilantro adds a pop of color and a subtle herbal note. The soup is easy to customize- add more water if it's too thick, or add more chili powder if you want some extra heat. Instructions

1.In a large bowl, pour the boiling water over the textured vegetable protein and let sit for 10 minutes until all the water is absorbed.
2.In a large pot, heat the canola oil over medium heat. Add the chopped onions and sauté until they are soft and fragrant.
3.Add the minced garlic and sauté for another minute.
4.Add the rehydrated textured vegetable protein, diced green chilies, hominy, diced tomatoes, vegetarian chicken broth, chili powder, and fresh cilantro to the pot. Add the additional 6 cups of water and bring the mixture to a boil.
5.Once at a boil, reduce the heat and let the soup simmers for between 30 and 60 minutes, stirring frequently.
6.Before serving, add lime juice to taste and additional salt and pepper, if needed.
