2 garlic cloves , crushed
1 tablespoon fresh ginger , grated
1/8 teaspoon cayenne pepper ( to taste )
4 teaspoons paprika
4 teaspoons ground cumin
1/8 teaspoon ground cloves
1 kg lamb , cut into 11/2 in chunks
6 red chilies , deseeded and chopped
2 ounces cashew nuts
1 tablespoon vegetable oil
500 g mushrooms , sliced

100 g natural yoghurt
1 tablespoon garam masala
250 g biryani rice
1/8 teaspoon turmeric
1/2 medium onion , sliced
25 g butter
2 bay leaves , fresh if possible
1 lime , juice of
50 ml rose water
50 ml vegetable oil
1 pinch saffron , dissolved in
50 ml milk
1 tablespoon melted butter
1 lemon , juice of
1/4 cup of fresh mint , chopped
2 tablespoons medium curry sauce
Posh Lamb Biryani is an Indian dish that is traditionally served during celebrations and special occasions. Instructions

1.In a large mixing bowl, combine the crushed garlic, grated ginger, cayenne pepper, paprika, cumin, and cloves. Mix well.
2.Add the lamb chunks to the bowl, coating each piece with the spice mixture. Marinate in the fridge for at least 2 hours, or overnight.
3.Preheat the oven to 350F. Spread the cashew nuts on a baking sheet and toast in the oven for 6-8 minutes, or until golden brown. Set aside.
4.Heat vegetable oil in a large, oven-safe pot over medium-high heat. Add the marinated lamb and cook for 5-7 minutes, or until browned on all sides. Remove lamb from pot and set aside.
5.Add mushrooms, garlic, ginger, and garam masala to the pot. Cook for 2-3 minutes, or until the mushrooms are tender.
6.Add the rice, turmeric, and sliced onions to the pot. Stir well, then return the lamb to the pot. Add the butter, bay leaves, and lime juice. Stir well and cover the pot.
7.Bake in the oven for 45 minutes to 1 hour, until the rice is cooked and the lamb is tender.
8.In a small bowl, combine the rose water and saffron milk. Set aside.
9.Heat vegetable oil in a small pan over medium heat. Add the chopped chilies and curry sauce. Cook for 3-5 minutes, stirring occasionally, until the sauce is heated through.
10.To serve, sprinkle the toasted cashew nuts and chopped mint over the top of the biryani. Drizzle with the saffron milk mixture and melted butter. Serve with the curry sauce on the side.
