Ingredients

1/4 cup olive oil
1 medium onion , finely chopped
4 garlic cloves , minced
1 green bell pepper , diced
1 can tomato sauce
1 cup water
1 cup dry white wine
1/4 cup fresh parsley
1 teaspoon dry oregano , crushed
1 teaspoon paprika
1/2 teaspoon dried thyme , curshed
1/4 teaspoon cayenne
2 bay leaves
1/4 - 1 teaspoon black pepper , to taste
2 2 lbs cod ( or mixture ) or 2 lbs red snapper , skinned and cut into 1 1/2 inch pieces ( or mixture )
Psarosoupa is a traditional Greek fish soup also known as Poseidon's Soup. This delicious soup is made with fresh fish, vegetables, spices, and herbs and is high in nutrients and vitamins. Instructions

1.Preheat the olive oil in a large soup pot over medium heat.
2.Add the onion and garlic and sauté until translucent, stirring frequently, for about 5 minutes.
3.Add the green bell pepper and cook until soft, about 5 minutes.
4.Mix in the tomato sauce, water, white wine, parsley, oregano, paprika, thyme, cayenne, bay leaves and black pepper.
5.Bring the soup to a boil, reduce the heat to medium-low, and add the fish. Cover and simmer for approximately 20-25 minutes, or until the fish is cooked through.
6.Taste and adjust the seasoning, if necessary.
7.Serve hot with crusty bread and a squeeze of lemon.
