Ingredients

4 large red peppers or 4 large red bell peppers , cored , seeded and quartered
5 lbs coarse salt ( not pickling salt , it is too fine )
1/2 cup good-quality imported olive oil
16 ounces jelly jars , sterilized

Instructions

1.Preheat your oven to 200degreesF or the lowest setting. Place the quartered peppers in a single layer on a baking sheet lined with parchment paper or a silicone mat.
2.Sprinkle the coarse salt over the peppers, making sure each one is coated and there is salt between the quarters.
3.Turn the oven off, and put it in the oven. Let the peppers dry out in the oven for at least 4 hours.
4.When you can, remove the peppers from the oven.
5.Put them in a blender, add the olive oil, and blend until smooth.
6.Pour into sterilized jelly jars and let sit for a few days before using.

Contains a lot of salt so should be consumed in moderation.
