Ingredients

1 1/2 cups pumpkin puree ( buttercup squash preferred ) or 1 1/2 cups squash ( buttercup squash preferred )
1 cup flour
1 egg , beaten
1/2 teaspoon salt
1 1/4 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon ground aniseed
2 tablespoons sugar
1/4 cup milk ( optional )
Portuguese Squash Fritters, also recognized as pumpkin fritters, are popular in Portuguese cuisine. The fritters are a great appetizer that could be enjoyed with family or friends. With their savory, crispy and filling taste, these fritters can fill any emptiness in the stomach.

Instructions

1.In a mixing bowl, combine all dry ingredients, including flour, baking powder, salt, cinnamon, nutmeg, aniseed, and sugar, by whisking them together.
2.In another bowl, beat one egg then whisk in milk. Mix in the pumpkin puree or squash and continue whisking until mixed.
3.Add the dry ingredients to the pumpkin mixture in batches and mix in between batches until fully combined.
4.Heat oil in a frying pan over medium heat until hot.
5.Drop spoonfuls of pumpkin mixture into hot oil, and cook until golden brown and crispy on both sides for about 2 minutes each side.
6.Transfer the fritters to a plate lined with a paper towel to absorb excess oil. Serve hot with your preferred sauce.
