Ingredients

4 bottles clam juice ( or 1 qt fish stock or water )
1 lb fresh medium shrimp
2 tablespoons olive oil or 2 tablespoons butter
1 large onion , chopped
2 garlic cloves , chopped
1 carrot , chopped
2 tomatoes , peeled and chopped
1/2 cup white wine
1 tablespoon brandy or 1 tablespoon port wine
1/4 cup raw rice
salt and pepper
1 tablespoon fresh parsley , chopped

Instructions

1.In a large pot, heat the olive oil or butter over medium-high heat.

4.Add the clam juice or fish stock, white wine, brandy or port wine, and raw rice to the pot.
5.Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
6.Add the fresh shrimp to the pot and cook until pink and fully cooked, usually about 5 minutes.
7.Once the shrimp are cooked, blend the mixture until smooth using an immersion blender or a blender, being careful not to splatter the hot soup.
8.Season the soup with salt and pepper to taste, garnish with fresh parsley, and serve hot.
