Ingredients

500 g uncooked medium king prawns , shelled
2 chorizo sausages , sliced thinly

2 medium red capsicums , sliced finely ( about 400g in weight )
2 teaspoons paprika
1 teaspoon tomato paste
1/2 lemon , juice of
250 g asparagus , thin stemmed , trimmed
1 green onion , sliced thinly
2 tablespoons parsley , finely chopped
3 tablespoons olive oil
2 teaspoons honey
1 teaspoon lemon juice
3 tablespoons red wine vinegar
1 -2 teaspoon sugar , depending on taste
This savory Portuguese Prawn and Chorizo dish is a perfect combination of fresh ingredients and bold flavors. Instructions

1.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
2.Add the sliced chorizo and cook for 2 to 3 minutes or until browned.
3.Add sliced onions and capsicums and cook for 3 to 4 minutes or until they become tender.
4.Add 2 teaspoons of paprika, 1 teaspoon of tomato paste and stir until combined.
5.Add the uncooked prawns and stir gently until they turn pink.
6.Squeeze 1/2 lemon onto the mixture and stir.
7.Add the asparagus and cook for a couple of minutes until tender.
8.In a small bowl, whisk together 3 tablespoons of olive oil, 2 teaspoons of honey, 1 teaspoon of lemon juice, 3 tablespoons of red wine vinegar, and 1-2 teaspoons of sugar (depending on taste) to make the dressing.
9.Serve the prawn and chorizo mixture hot with the dressing drizzled on top and garnish with sliced green onions and parsley.
