Ingredients

4 -5 large navel oranges
3 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 3/4 teaspoons kosher salt
5 large eggs
3 cups granulated sugar
1 1/2 cups mild extra-virgin olive oil
powdered sugar , for sprinkling
Orange-Olive Oil Cake is a traditional Portuguese dessert that's made using fresh oranges which are abundant in the country. It's a refreshing and light cake that's perfect for summer days. Instructions

1.Preheat your oven to 350 degrees F (175 degrees C).
2.Cut off the very top and bottom of each orange. Then, cut the oranges into thin slices. Removing any seeds.
3.Grease a 10-inch fluted tube pan with olive oil. Then, line the bottom with parchment paper and spray it
4.In a medium bowl, whisk together the flour, baking powder, and salt.
5.In a large bowl, beat up the eggs and granulated sugar with an electric mixer at a high speed for 6 minutes.
6.Slowly stir in the flour mixture until it's just combined.
7.Pour in the olive oil and stir until everything is smooth. Then, fold in the orange slices.
8.Pour the batter into the prepared pan and smoothen it with a spatula. Then, bake for about 55-60 minutes, or until the top is golden and a toothpick comes out clean.
9.Let the cake cool at room temperature for 10 minutes before removing it.
10.Dust with powdered sugar before serving.
