4 medium potatoes , peeled and thinly sliced

6 6 ounces chorizo sausage or 6 ounces other smoked sausage , thinly sliced
4 cups shredded fresh kale , chard or 4 cups collard greens , washed and dried
2 tablespoons fresh lemon juice

Instructions

1.Heat olive oil in a large pot over medium heat.

5.In a separate pan, heat vegetable oil and sauté chorizo until browned (around 5 minutes).
6.Add kale to the soup and cook for another 5 minutes until wilted.
7.Using an immersion blender, puree the soup until smooth.
8.Add lemon juice and season to taste with salt and pepper. Serve hot with chorizo and bread crumbs for toppings.
