Ingredients

3 tablespoons olive oil
2 lbs shrimp , peeled chopped
1 lb Baby Spinach
1 onion , grated
2 garlic cloves , minced
1/2 cup ham , cubed small
1/2 cup port wine
4 tablespoons butter
2 cups milk
1/4 cup flour
1 teaspoon salt
1 teaspoon white pepper
1 cup Fontina cheese , shredded
Portuguese Gratin of Shrimp and Spinach is a delicious and hearty dish originating from the coastal regions of Portugal. This dish is known for its comforting and rich flavors which come from the combination of shrimp, spinach, and creamy cheese sauce. It is perfect for a family dinner or a cozy date night in. Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet, sauté the shrimp in olive oil until pink, about 3-4 minutes.
3.Add the onion, garlic, and ham to the same skillet and sauté for another 2-3 minutes.
4.Pour the port wine into the skillet and let simmer for 5 minutes.
5.In a separate saucepan, melt the butter over medium heat. Add the flour and whisk until smooth.
6.Gradually add the milk and continue to whisk until the sauce thickens.
7.Add salt, white pepper, and Fontina cheese to the sauce and whisk until the cheese is melted.
8.In a large baking dish, layer the spinach on the bottom and add the shrimp mixture on top of the spinach. Pour the cheese sauce over the shrimp mixture.
9.Bake uncovered for 20 minutes or until bubbly and golden on top.
