4 cups flour
4 teaspoons baking powder
4 tablespoons sugar
12 eggs
1 teaspoon salt
oil ( for frying )
1 cup sugar ( or more if needed )
1 tablespoon ground cinnamon ( or more according to your taste )

Instructions

1.In a saucepan, bring the water, cinnamon stick, lemon rind, and butter to a boil.
2.Remove from heat and add in the flour, baking powder, and sugar, stirring until well combined.

4.Transfer the dough to a pastry bag with a large star tip.
5.Heat the oil in a large pot over medium heat until hot but not smoking.
6.Pipe the dough into the hot oil, cutting off with scissors as you go, and fry until golden brown.
7.Drain the doughnuts on paper towels and roll in a mixture of sugar and cinnamon until coated.
