1 cup yellow cornmeal
1 1/4 cups cold water , divided
1 1/2 teaspoons active dry yeast
1 1/2 cups bread flour
2 teaspoons sugar
3/4 teaspoon salt
1 tablespoon olive oil

Instructions

1.In a small mixing bowl, combine cornmeal and 1 cup of cold water. Mix well and let rest for 10-15 minutes.
2.In a bread machine pan, add the yeast followed by flour, sugar and salt. Mix well.
3.Add olive oil to the cornmeal mixture and mix well. Add it to the bread machine pan.
4.Add remaining 1/4 cup of cold water and mix until the batter is smooth.
5.Close the lid and select the basic program to bake bread.
6.When the bread is ready, remove the pan from the machine and let the bread cool down. Slice and serve.
