Ingredients

2 pounds salted cod fish
5 large potatoes , peeled and sliced
3 large onions , sliced
3/4 cup olive oil
2 cloves garlic , minced
1 tablespoon chopped fresh parsley
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon paprika
3 tablespoons tomato sauce
This Portuguese Cod Fish Casserole is a classic dish that originated in Portugal, where seafood is a staple ingredient in the cuisine. Instructions

1.Soak the cod fish in cold water for 24 hours, changing the water 3-4 times to remove excess salt.
2.Preheat the oven to 375°F.
3.In a large skillet, heat the olive oil over medium heat.
4.Cook the sliced onions until they are soft, about 8-10 minutes.
5.Add the minced garlic, crushed red pepper flakes, and paprika to the skillet and cook for an additional 1-2 minutes.
6.Stir in the tomato sauce and chopped parsley.
7.Layer half of the sliced potatoes in a large baking dish.
8.Place the cod fish on top of the potatoes, then layer the remaining potatoes on top.
9.Pour the onion and tomato sauce mixture over the top.
10.Cover the baking dish with foil and bake for 45-50 minutes.
