2 pounds chorizo sausage , casings removed and crumbled | |
2 green bell peppers , seeded and chopped | |
2 sweet onion , peeled and chopped | |
1 can tomato paste | |
1 cup red wine | |
1 cup water | |
2 tablespoons crushed garlic |
1. | Heat oil in a large skillet over high heat |
2. | Add chorizo and cook, stirring occasionally, until browned |
3. | Add peppers, onions and garlic, stirring occasionally, until vegetables are soft and lightly browned |
4. | Stir in tomato paste, wine and water |
5. | Reduce heat to low and cook until sauce thickens |
6. | Serve hot with rice or crusty bread |
