Ingredients

2 red peppers , halved and seeded
4 chicken legs ( thighs and drumsticks )
1 tablespoon smoked paprika
1 tablespoon paprika
1 pound/ 450g chorizo sausage , sliced
salt & freshly ground black pepper
2 tablespoons canola oil
2 yukon gold potatoes , diced
1 medium onion , halved and sliced
2 garlic cloves , smashed
15 -20 clams
2 kale leaves , chopped with stems julienned
1/4 cup chopped fresh parsley , for garnish
1/4 cup chopped fresh chives , for garnish
olive oil , for drizzling and garnish
crusty Portuguese bread , for serving
Portuguese Chicken With Chorizo and Clams is a hearty and flavorful dish that combines the best of land and sea. Instructions

1.Preheat the oven to 350°F (180°C).
2.Place the red peppers skin side up on a baking tray, drizzle with olive oil and sprinkle with salt. Roast in the oven for 20 minutes, until the skin is blistered and blackened.
3.Once cooled, peel off the skins and slice the peppers into thin strips.
4.In a small bowl, mix the smoked paprika and paprika together.
5.Season the chicken legs with salt and pepper then coat them in the paprika mix. With a sharp knife, cut a few slits in each leg to let the flavor through.
6.In a heavy-bottomed pan with a lid, heat the canola oil to a medium-high heat and brown the chicken on all sides.
7.Add the sliced chorizo, diced potatoes, onion, garlic, and red pepper strips and cover with a lid. Place in the oven for 30 minutes.
8.Remove the pan from the oven, scatter the clams on top and place the lid back on the pan. Return to the oven for 10-15 minutes until the clams have opened.
9.Finally, add the kale and garnish with the chopped parsley and chives. Drizzle with olive oil and serve with crusty Portuguese bread on the side.
