2 serrano peppers or 2 tablespoons serrano peppers , minced
1 medium onions or 1 cup onion , thinly sliced
6 garlic cloves or 2 tablespoons garlic , thinly sliced
1 1/2 teaspoons chili powder
3/4 teaspoon smoked paprika
3 sprigs fresh thyme
2 bay leaves
14 1/2 ounces diced fire-roasted tomatoes
1/4 cup fresh basil leaf , torn

1 cup ricotta cheese
6 large eggs
1 cup sharp white cheddar cheese , shredded
1/4 cup parmesan cheese , grated

Instructions

1.Preheat the oven to 425°F (220°C).
2.Heat the olive oil in a 10-12 inch cast iron skillet over medium-high heat.
3.Add the chorizo and cook, stirring occasionally, until it begins to brown, about 4-5 minutes.
4.Add the sliced bell peppers, minced serrano peppers, onion, garlic, chili powder, smoked paprika, thyme, and bay leaves to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 10-12 minutes.
5.Add the fire-roasted tomatoes and basil to the skillet and stir to combine. Cook until the tomato mixture has thickened slightly, about 5-7 minutes. Season with salt and pepper to taste.
6.Spoon the ricotta cheese over the top of the tomato mixture and make six small wells in the mixture. Crack the eggs into the wells and sprinkle the shredded cheddar and grated parmesan over the top.
7.Transfer the skillet to the preheated oven and bake until the eggs are cooked to your liking and the cheese is melted and bubbly, about 12-15 minutes.
8.Remove the skillet from the oven and let cool for a few minutes before serving with the sliced crusty bread.
