Ingredients

2 tablespoons olive oil
1 onion , finely chopped
1 lb carrot , scraped and cut into 1-inch
2 cups beef or 2 cups chicken stock
1 bay leaf
3 egg yolks
2 tablespoons lemon juice
2 tablespoons finely chopped parsley
salt & freshly ground black pepper

Instructions

8.Gradually whisk in 1/2 cup of the hot broth.
9.Add the egg yolk mixture to the pot and stir well.
10.Cook for 2-3 minutes, or until heated through.
11.Remove from heat and stir in the parsley.
12.Season with additional salt and pepper to taste.
