1 1/2 - 2 1/2 lbs pork tenderloin , butterflied
2 lbs portabella mushrooms , sliced
1 tablespoon butter or 1 tablespoon olive oil
1/2 cup white wine
1/4 cup fresh cilantro leaves , chopped
2 garlic cloves , smashed , divided
salt and pepper
1/2 lb broccoli floret , chopped
1/4 lb parmesan cheese , shaved about 1/8 inch thick
2 teaspoons butter or 2 teaspoons olive oil

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, melt 1 tablespoon butter or heat 1 tablespoon olive oil over medium heat.
3.Add 2 cloves of smashed garlic and stir for 1 minute, then add sliced portabella mushrooms and cook, stirring occasionally, for about 8 minutes, until mushrooms are soft and brown.
4.Add 1/2 cup of white wine and simmer for about 4 minutes until liquid has evaporated by half.

8.Butterfly pork tenderloin (make a lengthwise cut through the center, leaving it attached on one side, and opens like a book), season it with salt and pepper, and place the mushroom mixture over it.
9.Roll the pork tightly to enclose the filling, then sear it in the skillet for about 3 minutes per side.
10.Transfer the pork to a baking dish and bake for about 20 minutes until the internal temperature of the pork registers 145°F.
11.Top the pork with parmesan cheese shavings and bake for another 5 minutes or until cheese is melted and slightly golden brown.
