Ingredients

2 medium portabella mushrooms
1 small onion
3 garlic cloves ( minced )
2 small roma tomatoes
6 anaheim chilies
1 cup mushroom broth
salt and pepper
2 tablespoons vegetable oil
Portobello Mushrooms and Roasted Green Chilies make for an excellent vegetarian main dish option. Not only is this dish packed with flavor but it’s also quite easy to make. The smoky flavor of the mushrooms complements the tart flavor of juicy tomatoes, while the roasted green chilies add an extra layer of smokiness and spice to the dish. This dish is filling, hearty and can be used as a main vegetarian dish or a side dish paired with rice or bread. It’s the perfect meal option for vegetarians or those looking for healthy, vegetable-filled meal options.

Instructions

1.Preheat the oven to 450°F.
2.Remove the stems from the mushrooms and slice them into 1/4-inch thick slices.
3.Slice the onion and tomato into thin slices.
4.Roast the green chilies over an open flame until charred on all sides. Once cool enough to handle, peel off the blackened skin, remove the seeds and slice them into thin strips.
5.Heat the oil in a large skillet over medium heat. Add the sliced onions and cook for 2-3 minutes until they start to soften. Add the minced garlic and cook for another 30 seconds.
6.Add the sliced mushrooms and cook for 5-7 minutes until they start to release their liquid and turn brown.
7.Add the sliced tomatoes and roasted green chilies and cook for another 2-3 minutes until everything is heated through.
8.Pour in the mushroom broth, season with salt and pepper to taste and stir everything together. Bring the mixture to a simmer and cook until the sauce has thickened, around 5 minutes.
9.Serve hot with a side of rice or bread.
