1 teaspoon extra virgin olive oil
salt & freshly ground black pepper
2 teaspoons unsalted butter
2 slices firm white bread
1 tablespoon pesto sauce
1/2 cup shredded gruyere cheese

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Line a baking sheet with parchment paper.

4.Place mushroom cap on prepared baking sheet, gill-side up and bake for 20 minutes.
5.Remove from oven and let it cool for 2-3 minutes.
6.In a pan over low heat, melt butter.

8.Spread pesto on one slice of bread, and place the mushroom cap on top.
9.Add the shredded gruyere cheese on top of the mushroom cap.
10.Place the other slice of bread on top and spread a small amount of butter.
11.Transfer the sandwich to the pan, cover, and cook until cheese is melted and bread is crispy.
