Ingredients

1 tablespoon olive oil
1 yellow onion , chopped
2 cups cubed butternut squash
1 can great Northern beans , rinsed and drained
1 cup frozen lima beans
3 cups chicken stock
2 cups frozen corn
2 tablespoons chopped fresh basil
1 banana pepper , chopped
Porotos Granados is a traditional Chilean dish made with beans, squash, corn and spices. Instructions

1.Add olive oil to a large pot over medium heat. Once hot, add chopped onion and stir until onions are translucent.
2.Add cubed butternut squash, great Northern beans, and frozen lima beans. Mix well.
3.Add chicken stock and bring to a boil. Reduce heat and simmer for about 20 minutes.
4.Add frozen corn and banana pepper. Cook for an additional 5 minutes.
5.Stir in fresh basil and salt to taste.
