1 fennel bulb , finely chopped , feather tops saved for garnish
8 new potatoes , quartered
4 carrots , peeled and cut into 2 inch pieces
4 parsnips , peeled and cut into 2 inch pieces
2 onions , cut into 2 inch chunks

Instructions

1.Preheat your oven to 325 F.
2.In a bowl, combine salt, black pepper, garlic, parsley, fennel seed, and olive oil until well mixed, then rub the mixture all over the pork butt.
3.Scatter the finely chopped fennel bulb, quartered new potatoes, 2-inch carrot pieces, 2-inch parsnip pieces, and 2-inch onion chunks in the bottom of a dutch oven or roasting pan.
4.Place the seasoned pork butt on top of the vegetables and roast it in the preheated oven.
5.Turn the pork every hour, and after cooking for about 3 to 4 hours, check the temperature of the meat using an instant-read thermometer. You should aim for a temperature of 145 F.
6.When the internal temperature of the pork reaches 145 F, remove the pan from the oven and cover it with aluminum foil. Let it rest for at least 10 minutes before carving.
