1 bone-in pork shoulder roast
1 carton chicken broth
2 cups water , or as needed to cover
2 chicken bouillon cubes
2 tablespoons Cajun seasoning
1 tablespoon onion powder
1/4 cup butter
3 large heads bok choy - large outer leaves and base trimmed off , heads thickly sliced
2 bunches fresh cilantro leaves , chopped - divided
1 cup water
2 packages dried flat rice noodles
crushed red pepper flakes to taste
grated Parmesan cheese to taste

Instructions

1.Preheat oven to 350 degrees F (175 degrees C). Grease a roasting pan.
2.Place pork shoulder roast in the prepared roasting pan.

4.Bake in the preheated oven until pork is tender, 2 to 3 hours. Remove from oven and let cool.
5.Remove meat from bones and transfer to a large saucepan. Discard bones and skin.
6.Melt butter over medium heat in a separate saucepan. Add bok choy and half the cilantro; cook and stir for 5 minutes. Add to saucepan with pork.
7.Stir in water, noodles, and remaining cilantro; cover pan and simmer until noodles are tender, about 5 minutes.
8.Divide noodle mixture between bowls; sprinkle with red pepper flakes and Parmesan cheese. Serve with lime wedges on the side.
