Ingredients

1 1/2 lbs pork , cubed
2 onions , sliced
6 garlic cloves , chopped
6 ounces ghee
1 teaspoon paprika
1/2 teaspoon turmeric
1 teaspoon fenugreek seeds
1 tablespoon fresh ginger , finely chopped
2 green chilies
1 teaspoon salt
1/4 pint water
2 tablespoons tamarind paste
1 1/2 teaspoons garam masala
2 bay leaves
6 cardamoms , slpit open
4 cloves

Instructions

1.Roast fenugreek seeds, paprika, and turmeric powder in a frying pan on medium heat for a minute or until it becomes fragrant. Set aside once done.

3.Mix the roasted powder with ginger and green chillies, then add and fry until fragrant.
4.Stir in the cubed pork and fry for about 10 minutes or until browned on all sides.
5.Add the water, tamarind paste, bay leaves, garam masala, cardamoms, and cloves, making sure everything is combined.
6.Bring to a boil, lower the heat, and simmer for about 45 minutes, stirring occasionally.
7.Season with salt and add more water if needed, then allow the pork vindaloo to simmer for another 15 minutes or until the sauce starts to thicken. Serve with naan, rice or bread of your choice.
