Ingredients

3 1/2 lbs pork tenderloin
6 cups orange juice
2 teaspoons salt
2 tablespoons butter
3 large shallots , finely chopped
1 cup dry white wine
2 3/4 cups low sodium chicken broth
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh chives
1 tablespoon minced canned chipotle chile in adobo

Instructions

1.Preheat the oven to 375°F.
2.In an oven-proof skillet over medium-high heat melt butter and add finely chop the shallots. Cook the shallots until they are translucent, then add pork tenderloin and sear all over until it's brown.
3.Pour in white wine, orange juice and canned chipotle chile in adobo.
4.Bring this sauce to a boil and then transfer the skillet to the oven to bake for about 20-25 minutes until the pork internal temperature reaches 145°F.
5.Transfer the tenderloin to a cutting board and let it rest for 10-15 minutes. Immediately after making the sauce, remove the skillet from the oven and carefully remove the sauce to a pot.
6.Skim excess oil from the sauce with a spoon.
7.Pour one cup of chicken broth into pot and bring this mixture to a boil. Then, let it simmer for 10 minutes and stir in chopped cilantro and chives.
8.Slice pork and drizzle skillet sauce over it to serve.
