2 lbs pork tenderloin

Instructions

1.Heat oil in a large saucepan over medium heat. Add onion, ginger, garlic and serrano chili; sauté for 5 minutes or until onion is tender.
2.Add molasses and rum; stir well. Bring to a boil; reduce heat, and simmer for 5 minutes or until reduced to 1/2 cup.
3.Add hot coffee to pan, and cook for 30 minutes or until reduced to about 1 1/2 cups.
4.Strain mixture through a fine sieve into a bowl; discard solids.
5.Return mixture to pan. Add coffee grinds, cinnamon, and cocoa; stir well. Cook 10 minutes over medium heat, stirring occasionally.
6.Remove mixture from heat and stir in butter and salt.
7.Preheat oven to 400°F.
8.Cut pork tenderloin into 1 inch thick pieces.
9.Heat an oven-proof skillet over medium-high heat.
10.Add pork and sear until browned on all sides, about 6-8 minutes.
11.Pour coffee glaze over pork.
12.Roast for 15-20 minutes or until a meat thermometer inserted into the thickest part reads 145 degrees Fahrenheit, turning occasionally.
