Instructions

.Preheat oven to 350°F (180°C).
.Cut a lengthwise slit down the center of the pork tenderloin, being careful not to cut all the way through. Open the pork like a book and lay it flat on a work surface.
.In a large skillet over medium heat, cook bacon until crispy, about 7 minutes. Using a slotted spoon, remove bacon from skillet and drain on paper towels. Leave the bacon grease in the skillet.
.Add butter, onion, and celery to the skillet. Cook until softened, about 5 minutes.
.Stir in apples, currant jelly, fennel seed, and a pinch each of salt and black pepper. Cook until the mixture is tender and fragrant, about 5 minutes. Remove skillet from heat and stir in breadcrumbs.
.Spread stuffing over one side of the pork tenderloin, leaving a 1-inch border around the edges. Roll up the pork tenderloin and tie it with kitchen twine at 1-inch intervals.
.Season the outside of the pork tenderloin with more salt and pepper.
.Place the pork tenderloin in a roasting pan and bake until an instant-read thermometer inserted into the center of the pork reads 145°F (63°C), about 25-30 minutes.
.Remove pork tenderloin from the oven and transfer it to a cutting board. Let rest for 5 minutes before slicing. Serve hot and enjoy!
