Ingredients

1 3/4 lbs pork tenderloin
1/4 cup white wine
1/4 cup soy sauce
1/4 teaspoon red pepper flakes
1 tablespoon minced fresh ginger
1 tablespoon minced fresh garlic
2 teaspoons fish sauce
2 tablespoons lime juice ( fresh squeezed )
1 teaspoon brown sugar
2 teaspoons olive oil or 2 teaspoons peanut oil
2 tablespoons finely diced red peppers
2 green onions , thinly sliced on diagonal
1/4 cup chopped fresh cilantro
2 lime wedges
1 tablespoon chopped peanuts
cornstarch , mixed with ( optional )
water ( optional )
steamed rice ( jasmine preferable )

Instructions

1.Combine white wine, soy sauce, red pepper flakes, fresh ginger, garlic, fish sauce, lime juice, and brown sugar in a bowl. Mix well and set aside.
2.Cut the pork tenderloin into large pieces and flatten with meat mallet. Coat the pork with marinade.
3.Heat olive oil or peanut oil in a frying pan, add the pork pieces and cook, turning occasionally for 15-20 minutes or until cooked through.
4.Meanwhile, sprinkle cornstarch on top of pork pieces. Add water to make a light gravy. Cook for about 5 minutes.
5.Serve pork slices on a bed of steamed rice, garnish with cilantro, red pepper, green onions and peanuts.
6.Squeeze a lime wedge on top. Enjoy!
