Ingredients

1 cup guava jelly ( available at Latin and Caribbean markets & large supermarkets ) or 1 cup apricot jam
1/4 cup Dijon mustard
1/4 cup orange juice ( preferably fresh )
salt & freshly ground black pepper
crushed red pepper flakes ( optional )
2 tablespoons mild vegetable oil , such as canola
1 small red onion , finely chopped
4 garlic cloves , finely chopped
3 cups orange juice ( preferably fresh )
1/2 cup fresh lime juice ( not the bottled kind )
1/2 habanero pepper , seeded and finely chopped
2 tablespoons chopped fresh cilantro leaves
1 teaspoon cumin seed
salt & freshly ground black pepper
2 pork tenderloin
2 tablespoons mild vegetable oil , such as canola
salt & freshly ground black pepper

Instructions

1.Preheat oven to 375°F.
2.In a small mixing bowl, combine guava jelly (or apricot jam), Dijon mustard, orange juice, salt and black pepper.
3.Remove silver skin from pork tenderloins. Season well with salt, black pepper and crushed red pepper flakes as per your spice preference.
4.In a large skillet, heat vegetable oil on high heat. When oil is hot, sear the pork tenderloins for about 2-3 minutes per side, so that all sides are browned.
5.Remove pork from skillet and place onto a baking sheet. Brush the guava jelly mixture over both pork tenderloins.
6.In the same skillet used for pork, add onion, garlic, orange juice, lime juice, habanero pepper, cilantro, cumin seed and salt. Bring the mixture to boil then reduce and simmer on medium heat until the mixture turns into a thick glaze.
7.Brush the glaze over the pork tenderloins.
8.Bake the pork for about 15-20 minutes, or until internal temperature reaches 145°F.
9.Let the pork tenderloins rest for about 5 minutes before slicing.
