Ingredients

2 1/2 lbs pork loin
3 poblano chiles
1/2 lb oaxaca cheese , crumbled or 1/2 lb mozzarella cheese , shredded
2 tablespoons vegetable oil
4 carrots , peeled and chopped
1 onion , chopped
2 stalks celery , chopped
2 bay leaves
salt , to taste
pepper , to taste
water , to cover
3 tomatoes , pureed and sieved

Instructions

1.In a pot, boil the pork for about 30 minutes or until soft.
2.Remove the pork from the pot and let it cool. Once cooled, slice it into thin pieces.
3.Roast the poblano chiles under the broiler until the skin is blistered and charred. Once done, put them in a resealable plastic bag and let them sweat for about 10 minutes. Once cooled, peel the skin off and discard the seeds.
4.Preheat the oven to 375F.
5.In a large skillet, heat the vegetable oil and sauté the carrots, onion, and celery until the vegetables are tender.
6.Add the bay leaves, salt, and pepper to the skillet and mix well.
7.Layer the sliced pork, roasted poblano peppers, and Oaxaca cheese in a greased baking dish. Repeat until all ingredients are used up.
8.Pour the tomato puree over the top of the layered ingredients, so that everything is covered by the sauce.
9.Bake the dish uncovered in the preheated oven for 30 minutes or until bubbling and golden brown.
