Ingredients

1 pork roast
2 tablespoons achiote paste ( known as adobo-check in the Mexican market or section )
1 1/2 tablespoons salt
3 tablespoons orange juice

1 teaspoon fresh ground black pepper

3 1/2 cups all-purpose flour
1 1/2 cups salt
1 tablespoon ground cumin
1 1/4 - 1 1/2 cups water

Instructions

1.Preheat the oven to 325 degrees F (165 degrees C).
2.In a blender or food processor, combine the achiote paste, salt, orange juice, lemon juice, vinegar, oregano, allspice, black pepper, cumin, and garlic until a smooth paste forms.
3.Rub the paste all over the pork roast and wrap the roast in foil.
4.In a bowl, mix flour, salt, and cumin. Gradually add enough water to make a thick, but pourable, mixture. Pour this mixture into the bottom of a roasting pan.
5.Place the wrapped pork roast in the roasting pan and cover it completely with the remaining mixture.
6.Cover the entire roasting pan with foil and bake in the preheated oven for about 4 hours or until the internal temperature of the pork roast reaches 145 degrees F (65 degrees C).
7.Remove the pork roast from the oven and let it rest for 10 minutes before unwrapping and serving.
