1 garlic clove ( crushed )
1 can tomato sauce
1/2 cup water , plus
1 tablespoon water
1/2 teaspoon dried basil
1/8 teaspoon dried thyme
2 sprigs fresh parsley
1 bay leaf

Instructions

1.In a bowl, mix 2 tablespoons of flour, 1 teaspoon of salt, and black pepper until combined.
2.Coat the pork with the flour mixture and shake off any excess.
3.In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Brown the pork chops on both sides for about 2-3 minutes per side and transfer them to your slow cooker.
4.Add 2 1/4 teaspoons of butter, 2 1/4 teaspoons of olive oil, onion, carrot, celery, garlic, and 3/4 teaspoon of salt to the same skillet that you used earlier. Sauté them for approximately 3-4 minutes or until they're tender.
5.Mix 3/4 teaspoon of flour into the sautéed vegetables until well combined.
6.Add in the tomato sauce, water, dried basil, dried thyme, fresh parsley, and bay leaf to the skillet and stir to combine.
7.Pour the mixture over the pork chops in the slow cooker.
8.Cover the slow cooker and cook on low for 6-7 hours or until the pork is fork-tender.
