1 chipotle chile in adobo ( to taste )
1 cup sour cream or 1 cup mayonnaise
iceberg lettuce , shredded
1 avocado , sliced
1/2 lemon , juice of
1 small red onion , thinly sliced
1 cup coarsely queso blanco or 1 cup mozzarella cheese , grated
4 hamburger buns with sesame seeds , lightly toasted

Instructions

1.Preheat oven to 200C (400F).
2.Season the pork chops or chicken breasts with salt and pepper.
3.In separate bowls, place the flour, beaten eggs, and breadcrumbs.
4.Coat the pork chops or chicken breasts with flour, then dip them in the egg mixture, and finally coat them with breadcrumbs.
5.In a large skillet, heat the oil over medium heat. Add the pork chops or chicken breasts and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
6.Meanwhile, in a blender or food processor, blend the chipotle chile in adobo with sour cream or mayonnaise, lemon juice, and a pinch of salt until smooth.
7.To assemble the sandwich, spread a dollop of the chipotle sauce on the bottom of each hamburger bun. Top with shredded lettuce, sliced avocado, red onion, and queso blanco or mozzarella cheese. Add a pork chop or chicken breast, and then add the top of the hamburger bun. Serve immediately.
