Ingredients

1 lb pork loin
1 ounce butter
salt and pepper
3 lbs white asparagus ( can substitute green asparagus for slightly different taste )
2 tablespoons sugar
1 small onion
1/2 pickle
2 hard-boiled eggs
1/2 cup creme fraiche
chervil

Instructions

1.Preheat your oven to 400F (200C).
2.Cut the pork loin into 1/2-inch thick pieces and season with salt and pepper.
3.In a large skillet, melt the butter over medium-high heat.
4.Add the pork pieces to the skillet and cook until browned on both sides, about 3-5 minutes per side.
5.While the pork is cooking, peel the asparagus and cut off the ends.
6.In another skillet, melt the sugar over medium heat, being careful not to burn it.
7.Add the onion and cook until translucent, about 3 minutes.
8.Add the peeled asparagus and cook for an additional 3-5 minutes.
9.Slice the half pickle into small cubes.
10.In a small bowl, mix together the chopped hard-boiled eggs, creme fraiche, and diced pickle. Set aside.
11.Transfer the cooked pork pieces to a baking dish and bake in the oven for 10-12 minutes, or until cooked through.
12.Divide the cooked asparagus onto four plates and top with the baked pork pieces.
13.Pour the egg and creme fraiche sauce over the pork and asparagus and sprinkle with chervil.
