Ingredients

2 pork hocks ( a little on the fatty side won � t hurt , bugger the cholesterol )
2 liters chicken stock
2 tablespoons hoisin sauce
1 tablespoon powdered ginger
1 cup palm sugar
1/2 cup water
8 green chilies
4 large red chilies , seeded and juilienned
2 tablespoons julienned ginger
1/4 cup fish sauce
1/4 cup fresh lime juice
4 cups vegetable oil

Instructions

3.In a separate pot, bring palm sugar, water, and green chilies to a boil for about 10 minutes.
4.Remove from heat and add fish sauce, lime juice, and red chilies.
5.In a frying pan, heat vegetable oil and fry the hocks until crispy.
6.Serve the hocks topped with chilli caramel sauce.
